In Indonesia, over 40 Marriott hotels have taken steps to create hydroponic Herb Gardens, providing fresh produce to their signature restaurants. W Bali – Seminyak, for example, sources at least 15% of their fresh produce from their own on-site garden. Sheraton Senggigi composts surplus food, creating healthy compost for the Chef’s Garden, while Sthala utilizes bacteria to decompose organic waste more efficiently.
